Smoothie beet leaves

I was starving this afternoon and instead of reaching for that chocolate chip cookie that was calling my name, I decided to make a smoothie.

Ingredients:

Fresh Beet leaves, one bunch washed

Water, 12 ounces

Frozen fruit, 2 Cups

Peach, One

Directions:

Wash the beet leaves and place in the blender with the water and fruit.  Blend until totally smooth.

These were leaves from the fresh beets I was baking in the oven for dinner.  Instead of throwing them away I washed them to make a quick pick me up.

One glass of water into the blender with the beet leaves.

In the blender the water measured exactly 12 ounces.

Raspberries, blueberries and blackberries.  I keep these frozen on hand all the time…for smoothies and deserts.

*Little side note, frozen fruits and vegetables are actually better for you than some fresh because they aren’t picked from the vine until they are perfectly ripe…unlike what we buy in the grocery that needs to be picked green, so it won’t turn to much in the delivery.*

To the beet leaves and water, I added two cups of frozen berries.

It looks like a lot, but that’s just because it froze together in one big lump.

I had one cup of peaches so I used that too.

The wonderful thing about juicing is there really are no rules…add whatever you have on hand.

It was a beautiful deep red color…really pretty and tasted amazing.  Made two completely full glasses, one for my husband and one for me.  The best thing is that I didn’t regret drinking it one bit…nothing but fresh vegetables, fruit and water.  No guilt…can’t get much better than that.
