Incredibly delicious and served cold. Embarrassingly easy to make.
INGREDIENTS:
One box of tortellini
One half bottle oil and vinegar salad dressing
Salt and pepper to taste
DIRECTIONS:
Cook the pasta according to the directions on the package, remove from boiling water and drain. Add one half bottle of dressing, salt and pepper to taste and stir.
Incredibly simple and easy!
I have made this a million times…well maybe not a million…but countless anyway. This is another recipe from my mother that gets rave reviews every single time I serve it to someone for the first time. It only takes eight minutes, can be made days in advance, and is soooo easy to make, it’s almost embarrassing. When asked for the recipe, I have to laugh because there is nothing to it and it’s really so simple…but that is the whole reason for this blog, sharing what I make…so here we go
I used two boxes this time because we were having a really big group.
The tortellini is filled with cheese and the Mezzaluna tortellini is filled with pesto…both delicious.
Gerrard’s is my very favorite oil and vinegar dressing…the Champagne is wonderful!
Add salt and pepper to taste, and one half bottle of salad dressing.
Seriously that is all there is to this wonderful tasting bite on a toothpick. No other ingredients are needed and this is soooo good served as an hors d’ oeuvre or as a cold pasta salad.
If you want you can add sliced string cheese, baby bell pepper sliced thin for extra color and texture, maybe some cilantro. I
t’s great no matter what you do.
Depending on the pasta you use you may need more salad dressing.
For two boxes I used one whole bottle. You want each piece covered, but you don’t want any standing dressing in the bottom of the bowl.
You can keep it simple by making it and putting it in a bowl, or add fresh basil and mozzarella on the toothpick for a single bite…it’s just soooo good…going through my blog I’m taking notice that I use “it’s just sooooo good quite a lot”…must be because they all are!
So that’s it…really nothing to it…embarrassing how simple this is.
