AVOCADO AND CILANTRO SALAD DRESSING

Ingredients:

1 bunch Cilantro

1 individual size container Lime Yogurt

1 Tablespoon Rice Wine Vinegar

2 Avocados

1/8 teaspoon Cayenne Pepper

1/2 teaspoon Cumin

Zest one Lime

Juice of one lime

3/4 cup Extra Virgin Olive Oil

3 Garlic Cloves, crushed

1/2 teaspoon Salt

1/2 teaspoon freshly ground Pepper

1/2 teaspoon Lemon Pepper

Directions:

Combine all of the above ingredients in a blender and pulse for 5 or 6 times, or until completely smooth.

is something that constantly happens to me.  This time I make salad dressing.

Everything goes into the blender…what could be more simple than that?

This is a creamy dressing with a nice bite from the lime, yogurt and garlic.   So good!

One bunch of cilantro, washed.  Don’t bother to take the leaves off the stems because the blender will take care of that.

1 Small Container of lime yogurt

1 Tablespoon Rice Wine Vinegar

Add the Rice Wine Vinegar to the blender

2 Avocados.  Of course you will want to remove the skin and seed before putting in the blender.  (My momma told me I needed to say that because so many people put the skin and all in blenders today. Avocado is not one of those things you want to do that with)  : )

Add 1/8 teaspoon Cayenne Pepper (more if you like) and a 1/2 teaspoon Cumin

Zest one lime then add the juice

Add 3/4 cup of Extra Virgin Olive Oil

Three garlic cloves

Crush and add to blender

1/2 teaspoon each Salt and Pepper

and 1/2 teaspoon Lemon Pepper

Hit Pulse for 5 or 6 times or until completely creamy…

and you will have a wonderful, super tasting salad dressing.

My granddaughter Noel couldn’t wait to taste it, so I put a little on a chip for her.  It passed the test.  🙂

It is simple as that.  This makes a wonderful dressing for salad, amazing topping for fish tacos…it was seriously good right off the spoon.

* Two days after I made this, I took the canning jar out of the fridge that I had it stored in, to use it with another dish I was making.  I was pleasantly surprised that it had not turned brown at all, but it did thicken too much.  All I did was add one cup of milk right in the canning jar, and stirred well.

It became a perfect mixture that was wonderful over a shrimp taco.  : )
