Fresh tomato sauce and basil make this sausage ravioli the best.
This dinner was delicious and really easy to make. I’m just learning how to cook for two but didn’t quite make it with this dish. We had it for dinner and then again two nights later…and it was even better.
INGREDIENTS
1 Package of grape tomatoes 10 ounces
1 Package of Ravioli
I used sausage ravioli, but any kind works
2 Italian Sausage
1 Shallot or onion, chopped
Garlic, 6 cloves Either put the garlic in whole and remove before serving or grate it
Fresh Basil sprinkled on top to taste
1 Tablespoon Olive Oil
1 Tablespoon Tomato Paste
1 teaspoon Oregano
1/2 teaspoon Thyme
Fresh Parmesan Cheese grated on top
A pinch of pepper flakes
Salt and Pepper to taste
DIRECTIONS:
Add into a medium hot saucepan, the tomatoes, garlic, and salt and pepper. Start the water for the ravioli. Brown the sausage cut up in large pieces with a little olive oil and the onions. When they are brown add to the tomatoes, and one scoop of pasta water and one large Tablespoon of tomato paste, oregano and thyme. Cover and let cook on low for 15 minutes. When the pasta is done, drain and add to the sauce. Serve and top with fresh Parmesan cheese and fresh basil.

The oil is in the pan is hot and I’m going to add the tomatoes.
I love this garlic because it doesn’t go bad and it’s already pealed and so easy to use.
I put the garlic in whole to take out later, but think next time I will use the garlic press and just leave it in. Added just a pinch of pepper flakes
One large Tablespoon of tomato paste
Bring the water to a full boil and add the ravioli, add one cup of the pasta water to the tomatoes.
I used one whole shallot and diced it. And onion will work fine too.
Added two Italian sausage to the shallots and cut them in large bite size pieces.
The sausage and shallots are cooked and will go into the sauce, along with the Oregano and the Thyme.
The sauce is getting thicker and I’m ready to add the sausage, shallots and the pasta is also ready, so I’ll add that.
Remove the pasta from the boiling water and add to the tomato sauce
After adding the sausage and the ravioli, I covered the pan and let it set for 15 minutes. Before serving I tore up some basil for the top. Add fresh Parmesan cheese grated over the top and serve.
Fresh cheese and garlic and of course butter on the bread, and under the broiler until crispy brown.
Served with a simple green salad and garlic bread.
This is the best oil dressing available, and I’m so thankful that my momma told me about using it.
