SHANE’S CORN SALSA

I absolutely love this fresh salsa with corn and lime.

There is no album selected or the gallery was deleted.

INGREDIENTS:

Cilantro, 1/2 bunch chopped

Red onion, 1/2 cup chopped

Corn, two cans drained

Black beans. one can drained and rinsed

Ortega Chilies, one can

Lime, the juice from two (grill the limes if you can, it makes the flavor incredible)

Avocado, two cut in bite size pieces

Salt, one teaspoon

Pepper, freshly ground one teaspoon

Cumin, 1/4 teaspoon

Sugar, 1/4 teaspoon

Garlic, fresh 3 cloves

DIRECTIONS:

Mix all the ingredients into a bowl and serve with your favorite chips, crackers or pita chips.

Our son in law made this and we loved it. Now I make it all the time too. Quick, easy and really delicious!

It is so easy and yet so very good. Don’t forget the lime it adds a lot of zest. I tried it this last time and used diced tomatoes, but really I think I like it best the original was. So good served with tortilla chips.

    • Good question. I’ll have to check out how you make Cowboy Caviar because I’ve never had any. Hold on just a minute…
      Okay, I looked it up and there are no black eyed peas, no diced tomatoes drained, regular onion instead of red, no pickled jalapenos, no garlic salt, and no Italian dressing. But they are very similar.
      I use just black beans, avocados, cumin, grilled limes, and red onion I’ll have to try it the other way too, sounds very good!
