CROCK POT CHICKEN

This chicken cooking all day will make your house smell wonderful! A delicious and easy dinner that you can fix in the morning, or the night before and come home to a fabulous dinner all ready to enjoy.

INGREDIENTS:

2 cans Stewed Tomatoes

2 cans Black Beans

1 box Yellow Rice

4 Chicken Breasts, boneless and skinless

2 Tablespoons Taco Seasoning

2 cans Butter Beans

2 cans Diced Tomatoes & Green Chilies

2 Stalks Celery, diced

2 Italian Squash, diced

1 Onion Yellow, Diced

1/2 Bell Pepper, Red, sliced

1/2 Bell Pepper, Yellow, sliced

Salt and freshly ground Pepper to taste. I use a Tablespoon of each.

DIRECTIONS:

Add all the ingredients into the crock pot in any order that you want.  It really doesn’t matter how because all the flavors come together beautifully while cooking no matter how you put them in.  I lined the the bell peppers, celery, squash, onions and diced tomatoes on the top, just because it looks so pretty that way.

The crock pot is an incredible invention…throw the food in…turn it on…walk away and six hours later you come back to your house smelling wonderful, like you’ve been slaving away all day long in front of a hot stove…and best of all, your dinner is completely done…ready and waiting for you to eat, whenever you want.

Also, the crock pot is a wonderful way to share a meal.  Mine has a lock lid, so I can easily take it to a friend in the morning, and they can eat whenever it works best for them.

I put this quick and easy dinner together in 15 minutes for a very dear friend of mine that had to have foot surgery.  This was the perfect dish to share so she could have a balanced meal in one pot, but not have to do a thing besides plug it in and eat.

 

In the bottom of the crock pot I put in two cans of stewed tomatoes.

 They are a bit sweet and add a nice flavor to the chicken.

Next…two cans of black beans

Pour them right over the stewed tomatoes

Right on top of the beans, pour the yellow rice…any brand.

Liberally sprinkle the taco seasoning on each side of the chicken breasts, and lay them on top of the rice.

Sprinkle the Taco seasoning on the other side of the chicken

Sprinkle with the salt and and freshly ground pepper

On top of the chicken, add the two cans of butter beans

And now add the two cans of diced tomatoes and green chilies

This is definitely a one dish meal, probably why I love fixing it as a dish to take to people so much.  You don’t need any side dishes, because your protein and vegetables are all in one pot.

Chop the celery, onion and Italian squash and line it across the top…for no other reason than it just looks pretty that way.

 

Last thing to add is the bell pepper slices…and that’s it.  Basically you just need to know how to operate a can opener…this is one easy dish to make.

Cover and cook on high for five to six hours.

When it’s done, shred the chicken with a fork.  Eat it in a bowl, over rice or in a warm tortilla.

A one dish wonder with a whole lot of flavor.  Everything you need for a meal is in one pot…and if there are leftovers, it tastes even better the next day.
