ICE COFFEE DRINK

The perfect cold drink on a hot summer day.

 

I LOVE an ice-cold Frappuccino, especially on these hot Georgia summer days…but honestly, I’m way toooo cheap to pay for one at Starbucks.  So I decided to make my own…after all, how hard could it be?  Turns out, it isn’t difficult at all.

This is one of those great disasters, a big mess that some people would not want to admit they made.  I made the mistake of filling up my blender with a little of this and a little of that…and what happened was a huge eruption of milk and coffee all over my kitchen!  Dripping down the cabinets, all over the counter, flowing down the dishwasher, all over the floor, all over the dishes I just washed, and all over me.  The Frappuccino turned out terrific…but I learned the hard way to measure next time, and not fill my blender up to the very brim.

Ingredients:

Instant Coffee, 2 Tablespoons

Left Over Coffee cold, 2 Cups

Half and half, 1 Cups

Ice Cubes, 8 to 10

Sugar or Sugar substitute, 2 Tablespoon or to taste

Chocolate Syrup, 2 Tablespoons

Salt, one pinch

Whipped Topping for the top

Directions:

I like to pour my left over coffee into ice trays and freeze them.  When I make a Frappuccino, I just add two cups of the cubes and it makes a really nice frothy drink.  All the ingredients go into the blender except the whipping cream.  That you will put on top of the drink and drizzle with chocolate syrup, after you pour it into a tall glass.

This is the big mess I made after filling the blender to full.  Everything was covered in coffee and milk…I just had to stand there and laugh.  Fortunately it turned out good enough to definitely make again.  This time being more careful to follow the directions.  🙂  If you are thrifty like me, you will definitely want to try this…ooor just one of those people who doesn’t want to drive for fifteen minutes to get a fantastic drink…besides the second cup is right in the fridge…a walk into the kitchen is soooo much closer to make my tummy smile.

It’s been a few weeks since I last posted the wonderfully tasty disaster in my kitchen, and once again my daughters are their friend came over for the kids to swim, and I wanted to make another Frappuccino for them.  Because I have a Blendtec, I used the ice`cream setting instead of just pulsing it…which made it super cold and slushy.  I also added one teaspoon of cinnamon and added not only chocolate to the top over the whipping cream, but carmel as well…and topped it with a little maraschino cherry…just because it looked pretty.

The results were even better than the first time.  Which is opening up all sorts of questions in my mind.  Like how about adding some peppermint, or vanilla, or nutmeg, or coca, or hazelnut, or ooooh my goodness…I bet Nutella would be fantastic in one!  We are definitely not done experimenting here.

I really love the frothiness..not exactly sure if that is a real word…but it was sooooo good, and cold…the perfect thing to cool down drinking.  I also started putting my left over coffee in ice cube trays, and using that in the blender instead of normal ice.  Makes for a more full bodied taste.

Pretty don’t you think?  And what is even better, is that I liked the taste of the second batch better than the first.  It’s a little hard to calculate just exactly how much this costs, but it can’t possibly be over a dollar and twenty-five cents for three drinks.  I used coffee we normally throw away, cream, a little whipping cream, probably not more than a teaspoon of chocolate and carmel sauce, and a cherry on top.

I will definitely be drinking these all summer long, and will continue to post different ingredients I use.  Coffee in the middle is a very good thing…but there is just no way I can drink it hot.  I’m very glad I found this recipe and hope you will try it too.

 

SMOOTHIE WITH BEET LEAVES

Smoothie beet leaves

I was starving this afternoon and instead of reaching for that chocolate chip cookie that was calling my name, I decided to make a smoothie.

Ingredients:

Fresh Beet leaves, one bunch washed

Water, 12 ounces

Frozen fruit, 2 Cups

Peach, One

Directions:

Wash the beet leaves and place in the blender with the water and fruit.  Blend until totally smooth.

These were leaves from the fresh beets I was baking in the oven for dinner.  Instead of throwing them away I washed them to make a quick pick me up.

One glass of water into the blender with the beet leaves.

In the blender the water measured exactly 12 ounces.

Raspberries, blueberries and blackberries.  I keep these frozen on hand all the time…for smoothies and deserts.

*Little side note, frozen fruits and vegetables are actually better for you than some fresh because they aren’t picked from the vine until they are perfectly ripe…unlike what we buy in the grocery that needs to be picked green, so it won’t turn to much in the delivery.*

To the beet leaves and water, I added two cups of frozen berries.

I had one cup of peaches so I used that too.

The wonderful thing about juicing is there really are no rules…add whatever you have on hand.

It was a beautiful deep red color…really pretty and tasted amazing.  Made two completely full glasses, one for my husband and one for me.  The best thing is that I didn’t regret drinking it one bit…nothing but fresh vegetables, fruit and water.  No guilt…can’t get much better than that.
